Avocado-Mango Tartare
Serves 1
1 ¼ oz. avocado, diced
1 oz. heirloom tomato, minced
1 oz. yellow peppers, diced
1 oz. mango, diced
1 tsp Key lime juice
1/8 tsp Maldon salt
½ tsp ground black pepper
½ oz. red onion, diced
pinch chopped cilantro
Directions: Combine all ingredients, except avocado. Place a ring or mold on a plate and scoop avocado in first; then top with another scoop of mango-vegetable mixture.
