What started as a tiny seafood shack has now become a full-fledged fish empire.

"It's a major market that we're excited to be in," says Gorenstein. "There's room for us -- fast-casual, healthy, delicious food in a fun environment. We can't wait to be a part of the neighborhood!"

In 2012, Gorenstein left his gig as executive chef at the Raleigh Hotel and launched My Ceviche alongside partner Roger Duarte, founder of George Stone Crab. The first location, situated in South Beach, is attached to a hostel. It only offers takeaway and delivery services.

The duo followed their flagship with a Brickell location, which opened this year and featured full seating.

The third My Ceviche still doesn't have an exact opening date, but construction is set to begin in a few weeks.
