A couple weeks back, we introduced you to Francesca Lacuesta and and Mark Jennings, proprietors of the upcoming Mac'n Vegetarian Soul Food Truck. It'll be the first totally meatless truck to hit the local mobile food scene. And with most menu items also available in vegan, and even vegan gluten-free, formulations, Mac'n is set to open its inclusive arms to a whole new set of food truck patrons. Plus, who doesn't love delicious mac n' cheese (or "cheese") or cornbread in general? Yum.

When we posted the last post, Lacuesta and Jennings were trying to round up money

to finish repairs on their truck, which they purchased at a steal used. It needed serious refurbishing. The pair had started a Kickstarter

fundraiser to try to raise $10,000, and were promising double food

dollars in pledges and other goodies for backers.

Well, as proof that

good things do happen to nice people, Mac'n got a nice cash infusion

outside of Kickstarter -- so they've posted a new fundraiser with a

smaller goal. But the benefits are still the same for backers!

The new fundraising goal is $3000 by Friday, April 29. Just as before, whatever you donate, you get double the amount back in food credit. Donate $10, say, and get $20 worth of food when the truck's on the road. Out-of-towners get other goodies, like an eco-friendly tote bag, and batches of pralines and pecan bars.

4 Cheese Mac: cheddar, fontina, gruyere and pecorino
"Bacon" Mac: faux bacon and cheddar
Veggie Mac: lite cheddar, parmesan, cauliflower, Portobello mushrooms, roasted garlic, broccoli
Vegan Mac: daiya cheddar (v)
Fried "Chicken": seitan drumsticks served with honey mustard and BBQ
Noodles are also available gluten-free
