Mac'n Truck is All Vegan; T.O.W. Finds a New Home UPDATED

Mac'n, Miami's first all-vegan food truck is finally set to roll out tonight. You may recall the Miami New Times reporting back in February that truck hopefuls Francesca Lacuesta and Mark Jennings were trying to raise capital to refurbish their truck through Kickstarter, a way for small businesses to raise money by courting mini-investors

Their Kickstarter campaign fell short so the duo had to raise cash the old-fashioned way -- they continued to work full-time jobs while working on the truck. Their hard work has paid off and the truck is fully refurbished.

Mac'n may be vegan, but don't expect to eat only sprouts and twigs. Vegans and carnivores alike will all fall in love with their menu, which changes daily. What's on tonight's menu? Cheddar Mac n' Cheese ($4), "Ham" Mac n' Cheese ($5), Fried Green Tomatoes ($4), Watermelon Cornbread ($2), Sweet Potato Fries ($3), along with some surprise goodies.

When asked how she feels about competing in a world of burgers, short rib tacos and pork sliders, Mac'n partner Francesca Lacuesta didn't seem worried, "I'm confident because my food is good. Not everyone wants to eat a burger for breakfast, lunch and dinner. People are inherently open to trying new things. I've been vegan for six years and I want to take a risk."

Mac'n plans to join some food truck roundups and also partner up with Miami clubs and bars to serve the late-night party crowds.

Mac'n Truck debuts at Food Truck Fridays at Palmetto Bay Village Center. This new roundup will be held the first and third Fridays of the month and features live music, free parking and lots of green space. Trucks serving from 5:30 to 10 p.m. include: Aarons Catering Express, Catered Bliss, CheeseMe, Chef on 4 Wheels, Dim Ssam a Gogo, Divan Bakery, Dog Eat Dog, Dolci Peccati Gelato, The Fish Box, The Flying Saucer, Kitchen Kabab, Kona Ice, Latin Burger, Mac'n, Metro Deli Express, Miso Hungry, Mr. Good Stuff, Papa's Tapas, The Red Koi, El Rey De La Paella, Shao Roma, Sno Caps, Sugar Yummy Mama, and The Yellow Submarine.

St. Brendan High School in Westchester will host a food truck rally tonight from 5:30 to 10 p.mTrucks serving include: B.C. Tacos, Cold Stone Creamery, Havana Rice, Latin House Grill, Mr. Chimi, Okay! Burger, Perros Express, The Red Truck, El Rey De Las Fritas, and Slow Food Truck.

St. Brendan's High School 2950 SW 87th Avenue, Miami

Yesterday, we reported that T.O.W. (Truckers Out West) was cancelled due to permitting problems. Well, those intrepid truckers have found a new home in Good Shepherd Church. Trucks serve dinner from 5:30 - 10:00 and include: Che Grill, Chef on Wheels, Churro Mania, Daddy's Grill, Dim Ssam a Gogo, The Fish Box, Frita Man, gastroPod, Grill Master Café, Gyromaniakz, Kona Ice, Latin Burger, Latin House Grill, Moty's Grill, Ms.Cheezious, Muscle Truck, Pop Burger Love & Chocolate Love, Purple People Eatery, El Rincon Del Coqui, The Rolling Stove, Sir Pizza, Sugar Rush, Tango Grill, Wing Commander, and Wrapidito Yum.

Update: Bad news, the Good Shepherd event has been cancelled as well.
