Dale Talde Is Throwing His First Brunch Rager This Weekend

To Dale Talde, brunch in Miami should be more than sweet food and fizzy drinks. Imagine an outrageous day party complete with an abundance of beats and booze, paired with Latin-inspired brunch plates like Cuban bao, platanomaduro skewers, and roast pork with yuzu mojo. That's how Talde envisions brunch.

"Something happens when you get off the plane in Miami, whether you're from Miami or not," he says. "Being a part of Miami now, it's been ridiculous in a good, fun way. Miami knows how to party unlike any city in the U.S."

This Saturday, the chef/owner will launch the first installment of his Miami Beach eatery's Brunch Life series, a monthly brunch bash transforming a& traditional outing with eggs, bacon, and French toast into something resembling a scene out of Spring Breakers — but with gourmet eats.

"It's going to be one long party with different all-you-can-eat food stations," he says. "And each month will bring a different culinary theme. This month is Latin food, inspired by the streets of Miami, with nonstop flowing food and booze. We want it to feel like a house party."

Talde calls this month's theme "Miami Brunch Machine," inspired by the 1996 flick The Birdcage and Gloria and Emilio Estefan's swagger in the 1980s, which explains the Latin-fusion plates.

DJ Otto von Schirach will help Talde host the soiree by spinning his signature soundtrack of booty bass, old-school hip-hop, rap, funk, punk rock, and soul. Games will be played too, including a make-out contest, sneaker- and outfit-of-the-day battles, twerk-offs, and dance-offs. Talde says the only rule for Miami Brunch Machine is the more funky and ridiculous the better.

"Basically, party with us, eat a little, drink a little, dance a little, hang out, make out, and have fun," he says.

The vibe and craziness you would experience at an afternoon pool party in Vegas is the atmosphere Talde wants inside his Asian-American restaurant this weekend — minus the pool.

"I always wanted to throw crazy brunch parties," he says. "If you've ever been to Vegas and seen the pool parties, it's superfun, and there's just something about it. Unfortunately, we don't have a pool in the restaurant, but we're going to show off our restaurant's theme, which is to keep it fun, not too serious, offer something cool alongside craveable eats."

Beats and booze aside, expect 305-inspired eats with a Talde twist, such as ropa vieja dumplings, fried rice and beans with lechón and yuzu mojo, and crispy avocado bao buns. It's all you can eat for $30.50 per person. Cocktails, created by bar master John Bush to follow the month's theme, will be à la carte.

Talde says every Brunch Life will be party-centric, but themes will change. "We're trying to make them all as fun and crazy as possible," he says. "A sneak peek to future themes is A Brunch of Mensches, but that's all we're saying for now."
