9. Bone Marrow with Veal Cheek Marmalade at Sugarcane
The roasted marrow at Sugarcane Raw Bar & Grill ($15) comes plated in conjunction with the best damn jam. They have decided to term it a "marmalade," but if that conjures up little orange jars and tea time, you are in for a surprise.
This version is made with veal cheek and appears to be more of a resting nest of caramelized confit meat. The gelatinous spread deep within the bone gets spooned out first, and
much like butter, melts into the tiny holes of an accompanying loaf of crusty bread. Then, you layer the the marmalade on top of the fatty marrow and sprinkle just a few flakes of sea salt...open wide, and enjoy the rich taste of meat on meat. The marrow oozes, and scorched edges of bone are ripe for the picking; just scrape your knife and fork along the sides. Don't risk disappointment when your spoon too soon hits solid rock instead of fatty happiness. It's very important to eat it all together the entire time, or you will run out of marrow (since they pile on the marmalade so high, though we're not complaining).
