There are many great dishes on Sustain's menu but there's something
special about the "50-mile salad." Available in two sizes (small $9/large $16), it arrives with a heap of
fresh, mildly spicy brassica greens from Paradise Farms; tender, sweet
beets roasted in the wood oven; heirloom tomatoes; pickled onions and fromage blanc from
Hani Khouri's Homestead farm. Sure, the fact that all of its
ingredients come from within less than a 50-mile radius makes this salad
different but that wouldn't matter if it didn't taste good. And this salad does, packing loads of flavor into each bite.
