Michy's dessert is a throwback to a kinder, gentler era of pastry making when elaborate chocolate swirls and shortbread spikes had yet to grace the plate. This retro favorite has been modernized, however, by Chef Bernstein, who tossed in a little of her homegrown Latin flavor. The giant ball of meringue is sweet and sticky, like cotton candy for adults. But it's what's on the inside that counts -- a dense pistachio cake with a thin stripe of tangy passion fruit salsa, and a generous slab of dulce de leche ice cream. Sort of the culinary equivalent of pulling a rabbit out of a hat; Baked Alaska seems to defy logic with a textural mixture of ingredients that have to be baked and kept cold at the same time. It's food magic!
