23. Quattro Formaggi Pizza at Andiamo
For the cheesiest of all pizzas, head to the Upper East Side where Andiamo serves up a "quattro formaggi" ($13.95 for a 14-inch medium sized pie) that will steal your pizza-loving heart. A four cheese combo of ricotta, mozzarella, parmesan and gorgonzola, combines into a pool of melted rapture. The ricotta provides a smooth textural contrast against the chunks of salty gorgonzola - pizza perfection. A traditional thin crust develops its' crispy outer skin courtesy of their brick oven, while the inner bite of bread will be soft and pliable. It's the ultimate white pie that requires very little adornment. A sprinkling of fresh garlic cuts the decadent weight of the dairy, and fresh basil is cut chiffonade-style, then tossed on top at the very moment the pie exits the oven, causing it to crisp up slightly at the edges. Tasty morning, noon and night; it's a pizza for all occasions. (A tip for the road: heat it up in the oven with an egg on top the morning after.)
