They look more like empanadas, but the corn masa quesadillas ($11.50) at Mercadito are simply in disguise. All the same elements are here - a corn or flour shell filled with cheesy-savory goodness, then folded to represent a "half moon shape." This outer shell has a light crispiness and inside is a blend of creamy cheese and wild mushrooms. They use both oaxaca and manchego, sprinkling a little fresh queso to finish, because more cheese is always better. A spicy green tomatillo salsa gets drizzled across the top, along with a generous helping of crema fresca. Black beans form a bed for the three triangular shaped "botanas," just be certain to scoop up a bit with every bite.
