The stark-white, 2-year-old
restaurant’s focal point is a pristine sushi bar backed by a drool-inducing cookbook collection. “We come from a side of Peru that’s very close to the ocean,” owner Fernando Chang says. “We have a very strong relationship with the sea, the fish, and the produce that comes from the coast.”
