True Loaf opened in Sunset Harbour in early November, but owner Tomas Strulovic has been developing this bakery for the past three years.
"It's been a long journey," he says.
The Venezuela native lived in Miami before moving to San Francisco, where he studied bread-making at the San Francisco Baking Institute. From California, Strulovic saw a gap in the Magic City's dining scene.

"Once I went to San Francisco, I realized Miami needed good bread," he explains.
Now he's in Miami Beach every day -- shaping sourdough loaves entirely by hand.
True Loaf bakery specializes in sourdough. Strulovic uses organic flour to bake brioche, croissants ($3.50), loaves, and scones.
But they don't come cheap. His country loaf sells for 9 bucks, and his olive loaf -- packed with organic olives -- costs a whopping $12.
His business already extends beyond the storefront, though. Strulovic is supplying his croissants to Panther Coffee in both Sunset Harbour and Wynwood.
