Run, piggy, run is the phrase we'll be hearing in Coral Gables when Swine
Southern Table & Bar opens at 2415 Ponce de Leon Blvd. in the
former Les Halles space this fall.
The restaurant will
be helmed by Top Chef alum Kenny Gilbert, who is working in
the kitchen at Yardbird Southern Table & Bar with fellow Bravo alumni Jeff McInnis.
Gilbert's current
title is executive chef at 50 Eggs, which is the creative team behind
both Yardbird and Swine.
Gilbert is working on the menu, which will focus on pork
items, showcasing heritage-breed hogs and fresh local ingredients.
Though the menu is still in the planning stages, look out for house-made
charcuterie, artisanal sausage, and a "whole hog" concept. There is talk
that both restaurants will share some menu items, such as desserts.
Like
it's poultry-inspired sister, Swine will feature culinary-driven
cocktails, a large selection of seasonal craft beers, an extensive
bourbon program, and, of course, wine for the swine.
Chef Gilbert has nearly 20 years of professional experience, and has served as executive chef at The Grill at The Ritz-Carlton Amelia Island, The Lodge at Sea Island, and The Inn at Lost Creek in Telluride.
