Serendipity Makes Kosher Ice Cream for Passover. Passover, one of Judaism's holiest holidays, kicked off, marking a weeklong fest in which Jews, despite cravings, abstain from chametz, which is any leavened food made from wheat, rye, spelt, barley, or oats.
