Market at Miami Beach Edition Makes Dining Fun

Celebrity chef Jean-Georges Vongerichten understands that when guests check into a beachside hotel, their instinct is to head toward the ocean. Therefore, when he was tasked with opening a spacious restaurant on the west side of the Edition Miami Beach, JG knew it had to be truly "creative." So with the help of hotelier Ian Schrager, the concept for Market at Edition was born.

Modeled after a Spanish boquería, Market features numerous stations where you can order without having to move an inch. Your server can bring you items from the raw bar, the cheese and charcuterie station, the dessert area, and the hot station featuring a pizza oven. Dining solo? Grab a counter seat. With a large group? There's plenty of room in this sleek, airy eatery replete with floor-to-ceiling windows. Unfortunately, the gourmet market items on display aren't for sale, but the pros at the various stations will gladly share their wisdom and let you sample some goodies.

Jean-Georges says that he culled many of Market's dishes from fan favorites at his New York restaurants and that he tried to include something for everyone. As a starter, the butternut soup with oyster mushrooms is spot on. It's velvety in texture and sharp in taste without being too rich. Another excellent vegetarian option is the assertively seasoned shredded kale salad, packed with jalapeños, minuscule croutons, and a Parmesan-and-mint dressing. Add $5 to $7 to toss in chicken, salmon, or shrimp to make a full meal out of it.

What's nice about Market is that you can create your own plate with cheese, meat, and even fish. Combinations like burrata, chorizo, and smoked sturgeon are possible, and who cares if they don't exactly match when each tastes great and you score three kinds of bread in the process? If raw is your thing, the fresh tuna tartare plated with avocado, radish slivers, and a dynamic ginger marinade is a wise choice.

The philosophy behind Market is to source premier ingredients (local when possible) and to keep the recipes simple to ensure consistency. It's a successful formula, and though neither the food nor the concept is particularly creative, Market is tasty and tons of fun. There's a lot to be said for having fun while you eat.
