Come this fall, the Eden Roc Renaissance Miami Beach will premiere a "farm-friendly steak house" co-conceptualized by Seth Greenberg, my dentist. Wait -- sorry, that's just a coincidence. This Seth Greenberg is a hospitality impresario from the Northeast. "Earth, fire, water, air, and space" will be the classical elements brought to bear upon the menu. I only hope they don't charge as much for the air as gas stations do.
The other half of the co-conceptualizing team -- hopefully the one in
charge of the food -- will be executive chef Paula DaSilva, first
runnerup in Season 5 of Gordon Ramsay's Hell's Kitchen. DaSilva was
previously chef de cuisine at Dean Max's 3030 Ocean in Fort Lauderdale
for ten years! That's downright Cal Ripken-esque.
The 200-seat steak house has yet to be named. Short Order likes to extend
our helping hand in matters such as this one (even if it usually gets
bitten). So if you have a suggestion for a clever moniker, feel free to post it in the comments section. The name we
deem best will win something. Not sure what yet, although I noticed a
Celine Dion concert CD/DVD laying unclaimed about the office this
week.
