Doré South Beach Serves French-Inspired Eats and Mixology Treats

 South BeachLooking for a bit more of the European aesthetic in your life? Doré South Beach, the newest addition to the Ritz-Carlton, is serving French-inspired, high-end eats with a mixology twist.

Diners can sip pear-infused pisco and watermelon purée while nibbling on hamachi tartare and homemade tortellini gratin -- all in a sleek, sexy 7,000-square-foot setup. Vive la France.

The new spot was launched by founder and owner Pascal Cohen, the CEO of FoodInvest Group; and cofounders Nalle Grinda, a high-end event expert, and Edmond Touboul, a veteran of luxury retail for haute couture brands. At the kitchen's helm will be executive chef Jeff Pfeiffer, formerly of Bal Harbour's La Goulue, creating French-inspired cuisine in both tapas and entrée styles.

Offerings will include the likes of chickpea crêpes with eggplant, goat cheese, arugula, olive, and tomato ($6); seared foie gras with Fuji apple and brioche ($23); beet salad with mache, blue cheese, red wine vinaigrette, and Perrier sorbet ($13); porcini risotto with white mushroom foam, truffle oil, and shaved truffle ($39); and tandoori spice duck breast with lemon couscous and rosewater fruits ($26).

"For the first time, a cuisine will be treated with playful execution, high-end ingredients, nicely plated, and delivered to customer at the right price. As the brand policy, a strong focus on great value to the customer providing international cuisine options with a French technique," Pfeiffer says.

Mixology will be a major component of Doré, with both signature and classic cocktail menus to pair with entrée items. They'll have selections such as the navy Manhattan, made with Knob Creek bourbon and sweet vermouth, lemon, and orange essential oils ($14); the east-side car, made with Rémy Martin VSOP cognac, yuzu East Asian citrus, and Cointreau orange liqueur ($13); and the smoked melon, made with fresh watermelon, Johnny Walker Black, honey, and clove ($14). They'll also offer a "Doré j'adore," the mixologists' daily special.

The mixology component was designed with "international influences from Europe, Asia, and the Americas, to please any world traveler's expectations, and to provide locals with a destination-like experience through the dishes," Pfeiffer says.

They'll also offer a dessert bar, lined with homemade decadence by executive pastry chef Kriss Velasco. Sweet treats include Venezuelan chocolate fondant with salted caramel ice cream ($11); chocopraline with hazelnut crunch, chocolate mousse, and praline anglaise ($12); and poire belle helene with poached pear, chocolate sauce, candied almonds, and vanilla ice cream ($12). Dessert comes in cocktail form too, like the chocolate cherry kick, made with cherry liqueur, "cocoa puff," Van Gogh chocolate vodka, and a touch of lemon ($12).

This spot spans a massive 7,000 square feet, including a main dining area that seats 90, a "Rotunda" lounge that seats 40, a bar lounge that seats 30, and a private dining room that can seat 40. So there's plenty of room for you and your entourage, European or otherwise.
