The fast-casual taco introduces breakfast today, February 3, featuring items crafted by executive chef Scott Linquist.

Menu items include chilaquiles con huevo with chips, queso, salsa guajillo, and crema; huevos rancheros on a crisp tortilla topped with ham, queso, and salsa ranchero; a breakfast burrito filled with huevos, pico de gallo, and Mexican cheese, plus your choice of tocino, chorizo, nopales, or hongos y huitaloche as filling. Potatoes or refried beans are served on the side. There's also a morning quesadilla with huevos, pico de gallo, crema, a Mexican cheese blend, and your choice of tocino, chorizo, nopales, or hongos y huitaloche, with potatoes or refried beans as a side. Each item is priced at $7.50.

Of course, the fact that Panther Coffee is next door kinda makes this the perfect grab-and-go nosh to start your day.

Coyo's breakfast is offered from 8 to 11:30 a.m. Monday through Saturday and 8 a.m. to 1 p.m. Sunday.
