54. Chicken Parmesan at Vesper
This colossal dinner option at Vesper, one of the restaurants at the famed Miami Beach hotel, Shelborne, could easily feed a family of four. One whole chicken takes a pretty rough pounding so that it becomes paper thin. The end result actually arrives in two separate dinner plates. Although this mammoth menu classic comes sans pasta, it can be easily added. "There are just some people who can't have chicken parmesan without the pasta," says bartender Teddy Collins, "But that's not a problem, we can bring it back for you if you need it."
The recipe includes two tomatoes, each slice is cut to full, circular perfection. Shaved parmesan and shredded lettuce top the steaming hot entree. This dish is best served on their outside on a candle lit, seaside terrace.
