For months, Coyo Taco's partners have been teasing Miami with expansion possibilities. In September, rumors were quashed that the Wynwood taco shop would open a Coconut Grove location. The restaurant did open a pop-up in South Beach at the Shore Club, but there was little information about a second permanent home.

Chef Linquist agrees. "I live in Brickell, and mostly there are really expensive restaurants. There's a tremendous amount of office space and a good balance of residential buildings. Just moving in, people have spotted us wearing Coyo shirts and said they need someplace affordable to have lunch or dinner."
The menu at the Brickell outpost will be similar to the one at the Wynwood location. "I'm literally sitting down working on the menu now," Linquist says. "We're going to start with our current menu and add some items from the Shore Club pop-up, like the grouper taco and the lobster taco."
The chef says a recent trip inspired an additional menu item he's working on. "We were just in Peru doing a pop-up, and we did a lot of food tasting. I'm going to do a crispy octopus with an ají amarillo aioli. We'll also have some more new and exciting stuff that we're adding to the menu."
Partner Sven Vogtland says the bar menu will start out with beer and wine. "We want to focus on great local beers and Mexican classics. We'll also do micheladas and sangrias."
Coyo Brickell will be open from 11 a.m. to 11 p.m. Monday through Thursday; Friday and Saturday will be late nights, with the restaurant open until 2 a.m. Breakfast will follow soon. Linquist says Brickell is particularly ideal for breakfast. "There are hundreds and hundreds of people commuting, and the train station is right across the street from us." Coyo Brickell will also offer delivery in the near future.
With the opening of the Brickell location comes the closing of the Shore Club pop-up. Vogtland says the closing coincided with the planned timeline and the beginning of the hotel's renovation. Will there be other Coyo Taco restaurants? Yes, but there are no concrete plans, Vogtland says. "We have our eyes out. We are looking every day for new opportunities."
