Say hello to the Holy Grail of vegan eats: Holi Vegan Kitchen & Bar. The fast-casual concept is only weeks away from feeding South Florida's voracious vegetarians and omnivores. The restaurant will serve a creative array of breakfast, lunch, and tapas options, plus wine and beer.

Holi,  located at 3099 NE 163rd St. in North Miami, is scheduled to open at the end of this month or the beginning of April.

The owners – two vegan couples – are working with chef Mark Reinfeld to perfect a roster of recipes and launch the spot, which they hope to open in other cities and states.

"Our goal is to serve the community with healthy, holistic, nourishing options that will provide the nutrients and energy needed," co-owner Maria Ramonda says. "We believe food is not only 'gasoline' for the body but medicine as well. Our approach is holistic – we are going to nourish bodies, souls, and minds."

The menu will include options such as a pesto garden scramble, potato hash, and bagels and cream cheese for breakfast; twice-baked potatoes, tempeh panini, and hamburgers for lunch; black bean tostones for tapas; and Bunnie Cakes goodies and energy bowls for dessert.

"I’m a fashion designer, but I've lived most of my life in Italy, so I've always been interested in food," Ramonda says. "I think it’s an art."
"We are going to serve award-winning wines and beers with vegan cheeses and meat boards. We promise the best scrambled eggs in Florida!" she says. The restaurant will also offer gluten-free options, cold-pressed juices, smoothies (including a savory variety), and other items. Main dishes will cost around $12 to $20. "I really want my restaurant to be for everybody," Ramonda says.

"In Europe, you get out of work and you go with your friends to have a glass of wine and finger food. We got our license to sell wine and beer, so the idea is to put tables outside with some lights and serve wine with maybe a board of cheeses and 'meats' that are not meat," she adds.
The restaurant will also offer takeout and grab-and-go items. "You can pick up your food and go home or sit and have some nice vegan food," she says.

In a city where healthy fast-casual options are just starting to spring up, Holi is a timely addition to the culinary landscape. Ramonda says the North Miami location is just the beginning for the healthful brand.

"I want the recipes to be consistent, so if we open another location, I want the food to be the same. The idea is to have more; we are doing everything so we can apply the concept in other cities and locations."
