Sugarcane continues executive chef Timon Balloo's Dinner With Friends series on Monday, and we just received word that a limited number of tickets are still available. He'll share the stove with Cesar Zapata, executive chef of the Federal Food Drink & Provisions, named New Times' 2012 Best Neighborhood Restaurant.
If you haven't already gotten a chance, you'll experience the Fed's "jar o' duck," a marshmallow fluff-enhanced creation that matches up salty, fatty duck rillettes with candied sweet potatoes. Also on the menu are two additional courses by Zapata, including octopus carpaccio with pickled peaches, black-olive powder, and a "citrus ice," as well as pastrami foie gras with mustard, green tomatoes, and tangerine oil. Balloo will serve creamy shellfish orzo and roasted veal garam masala with pickled mango.
Next month, on August 27, the kitchen will host Clay Conley, executive chef of Buccan in Palm Beach, who will bring his talents south for the evening.
Presented the fourth Monday of each month at 7:30 p.m., Dinner With Friends costs $110 per person, and seats are released to the public on the tenth of every month at 10 a.m. Email Sugarcane for reservations at [email protected].
