Martha Stewart Goes Meatless

You know meatless is mainstream when it's being embraced by the kitchen queen herself, Martha Stewart. The ex-con and corporate master known as M. Diddy just released a new cookbook compiling the best and brightest of her meat-free concoctions.

Meatless offers more than 200 recipes from the editors of Martha Stewart Living.Why the emphasis on meat-free eating? As Stewart says on her blog, "numerous studies have shown that you can reduce the risks of cancer, heart disease, obesity, and diabetes by consuming more vegetables, fruits, nuts, and seeds, and by eating fewer meats."

Amen, sister.

Not to mention the environmental factor, which she also addresses.

"Over the past several years, I myself, have had a gradual trending towards less and less meat, even less and less fish. Now I rely so much on other sorts of protein, on many vegetables, most of them farm raised, and on fruits and pastas."

The book covers everything from casseroles and salads to tacos and soups and everything in between. Recipes include portobello and zucchini tacos; potato pancakes with beets and chickpeas; sweet potato and avocado salsa; broccoli and white bean soup; quinoa veggie burgers and lots of other herbivorous edibles.

For $15, it's kind of a steal.

Stewart will be making her way to Miami in a few weeks, gracing us with her presence at the South Beach Wine & Food Festival. Tickets to her tribute dinner with Nobu Matsuhisa & Christophe Navarre are running a mere $535 a pop.
