Worth The Wait

The restaurant business is chock full of secrets and mind-boggling inner workings, especially if you work at a joint as successful as Joe’s Stone Crab. A Miami institution, Joe’s has been around for 100 years, and now its story is being told through the perspective of its waitstaff. With her first novel, Deeny Kaplan Lorber tells the story about the “waiters, not the wait” at Joe’s. The title of the book, Waiting at Joe’s, refers to the servers waiting on guests, but it also cleverly speaks to the fact that waiting for a table at Joe’s can be a lengthy ordeal. Written in the style of vignettes, the book takes the reader behind the kitchen door and reveals what it’s like working at a restaurant where the staff is like family and the patrons like old friends.
