At Taquiza, the tacos all start with a power tool. Grooves are carved into the stone discs that will eventually grind corn into the dough that becomes tortillas. This ancient preparation is filled with everything from delicate braised beef tongue to rajas poblano peppers roasted, sliced, and then combined with sauteed onion. What makes this walk-up Collins Avenue taqueria isn't its hip location but its adherence to Mexican tradition that makes every element of the humble taco from scratch.
