Red the Steakhouse Crafts Four Rotating Menus for Miami Spice

The countdown to Miami Spice is nearing zero hour, and restaurants are finalizing menus that take months of planning. One chef who's clearly put a lot of thought, calories, and meat into his menu is Peter Vauthy at Red the Steakhouse, where the menu will change weekly.

The lineup that begins in August includes week one, focused on classic steakhouse dishes, shifts in week two to a seafood menu, and then transforms into an Italian menu in the third week of Spice before ending on a menu called "Red’s Greatest Hits.” Last week, New Times tasted a playlist of all the samplings you'll be able to try during Miami Spice. 

Among the starters, the ones that shine brightest are the steak tartare, featuring certified-prime Angus filet, and the caper vinaigrette crostini, which will be available during weeks one and four. Some gorgeous prawns, fried burrata, and New England clam chowder available during the seafood week are also outstanding.


When it comes to main courses, it's tough to beat the Friday menus, when prime rib will be offered. The other red med served is the petite five-ounce Angus beef filet.


Among the other Red specialties, the meatballs offered during the Italian week are amazing, and the lobster fra diavolo, another seafood-week item, is exquisite.



During weeks one and four, a killer baked potato will be available with entrées, but there's no good reason not to splurge for the epic macaroni and cheese.




For dessert, bread pudding, chocolate silk pie, and coconut and pineapple cake are not to be missed.


The Spice menus at Red may be a bit complicated, but the best news is that all of the regular-menu items are also available as part of Spice for a specially priced surcharge, so you don’t have to worry that your week is missing a dish on your must-try list.

Miami Spice runs from August 1 through September 30 and offers diners prix-fixe lunches for $23 and dinners for $39 at 181 participating restaurants around town.
