South Beach's STK is more than just a sultry steak house. This restaurant is a survivor. The original Miami STK closed when 1 Hotel and Homes bought the space occupied by the Perry South Beach Hotel, formerly the Gansevoort South Beach. The eatery was then slated to reopen in time for December 2014's Art Basel when an accidental flood postponed its grand unveiling. But STK weathered the storm and is finally ready for business, even before the hotel's official launch date.

Miami marks STK's eighth location, with two in New York City. The concept for the hip-lounge-meets-modern-steak-house began in Manhattan's Meatpacking District and featured the catchphrase "Not your daddy's steakhouse." Indeed, it's a little too loud and sexy for most fathers.

The Collins Avenue spot boasts more than 10,000 square feet on two levels. There's a lounge with a DJ at all times and a spacious bar area, as well private dining rooms and two large artworks in the entryway by local artist Jessy Nite. This is a place where steak is served with a side of see-and-be-seen.

Speaking of meat, STK sources top-quality USDA Prime steak, and menu options include bone-in rib steak, bone-in filet mignon, and a porterhouse. Other signature dishes are bite-size Wagyu beef lil' BRGs, lobster mac 'n' cheese, and foie gras French toast. Chef Aaron Taylor, whom STK plucked from Meat Market in 2011, is back running the kitchen along with chef de cuisine Eli Jackson.

"We are thrilled to be reopening in Miami, one of the original STK markets,” said Jonathan Segal, CEO of the One Group, which owns STK. “STK Miami’s renovation perfectly captures and elevates the STK experience, and we are particularly proud of the exciting new design of the venue. We’re confident that our guests will love the space and look forward to once again offering Miami the food, fun, and energy that sets STK apart.”

Soon the eatery will be joined by Beachcraft and Sandbox, two concepts from James Beard Award-winning celebrity chef Tom Colicchio. Consider STK for your next big night on the town, but perhaps take a pass on Father's Day.
