After just a four-month stint, executive chef James Figueroa-Perez of Ideas Restaurant has been replaced. New head chef at this Coconut Grove restaurant is Jorge L. Sanchez, from Avila; his new fall menu premiers tomorrow night, but he promises to retain old favorites such as the cochinillo (suckling pig). Ideas, a Spanish restaurant focused on the region of Castilla y León, was best when it first opened in October, 2006 — with a pair of fantastic chefs from Castilla y León running the kitchen.

The past couple of years they've been shuffling chefs too often, to the detriment of the cuisine. Let's hope Sanchez brings the place back up — and stays around awhile.
