Permitting delays kept owners Joel and Leticia Pollock from permanent operation of their coffee shop earlier this year as planned.
The Pollocks moved to Miami from Oregon, where they had both worked in the coffee business for years. They wanted a place where they could offer small-batch specialty coffees, freshly roasted in house and prepared by trained baristas. They also supply their coffee to local shops, such as Nube Coffee in Coral Gables and the Miami Culinary Institute's café.
During the soft opening, Panther will serve a limited menu featuring coffees from Fazenda Isidro Pereira and Fazenda Chapadão de Ferro in Brazil; Finca Piedra Grande and Finca El Rosario in El Salvador; and Adulina in Ethiopia. Once the full menu rolls out you can expect coffee brewed using various methods -- drip, cold-brewed, French press, vacuum press -- as well as coffee-and-milk drinks, snacks, teas and juices.
Since Saturday is Wynwood's Second Saturday Art Walk, the coffee shop will open at 10 a.m. and close late at 11 p.m. From then on, it will open Sundays from 9 a.m. to 4 p.m. and Monday to Saturday from 7 a.m. to 7 p.m.
