Via Verdi Cucina Rustica: Rustic Italian Comes to Upper Eastside

Via Verde Cucina Rustica, a new restaurant by the twins behind Quattro Gastronomia Italiana, is set to open on Miami's Upper Eastside.

The place is a partnership between brothers Nicola and Fabrizio Carro and mixologist Cristiano Vezzoli. It is slated to open at the end of this month at the former Uva 69 space. The Carro brothers will maintain executive chef status at Quattro, overseeing the menu for the popular Lincoln Road bistro. Vezzoli most recently served as bar manager at Segafredo L'Originale, also located on Miami Beach's famed pedestrian mall.

Though the menu is still being finalized, dishes will be inspired by all of Italy's many regions -- the common denominator being, as the name implies, authentic rustic cuisine with a "twist of a dynamic presentation." The menu will be rotated several times a year to reflect seasonal changes in ingredients.

Not only are the partners creating the dishes, but they are also working on the renovation, making sure they have their hands in every step of the way. The décor will blend rustic woods with modern furnishings and will include a working fireplace (great for the few times there's a chill in the air). Via Verdi will also feature an outdoor bar where diners can enjoy assaggi (small plates), paired with wine or a cocktail crafted by co-owner Cristiano.

A cocktail mixed by the owner of a restaurant? Yes. The three partners plan to be at the restaurant daily. As the Carro brothers told Short Order: "The key to this restaurant is having owners who are hands-on in the operation. We make the final decisions on what happens, so we make sure we bring our inspirations to life."
