"We're going for a totally new vibe," says Sebastian Stahl, SuViche Hospitality Group's marketing director, which acquired the Novecento brand in July 2017. "There will even be self-serve wine machines. If it all goes well, then we'll start remodeling our other stores."
Chef and SuViche partner Jaime Pesaque is responsible for Novecento's new menu debuting in Doral. In addition to various cuts of meat, highlights include stracciatella with cherry tomatoes, filet mignon carpaccio, charred broccolini, and handmade ravioli

On weekends, the restaurant will host its new branch, which debuted earlier this summer at Novecento locations in Brickell and Aventura. Items include the kale Benedict topped with a tangy yogurt hollandaise, a stack of three buttermilk pancakes layered with candied bacon shards and drizzled with bacon-infused maple syrup, and the steak and eggs with filet mignon bites.
The 5,000-square-foot space, outfitted by Saladino Design Studios, features an open wine cellar on the second floor, with a large dining room and bar area below. In addition to a patio, there's also a private dining room fit for 40.
“Novecento is an iconic and a beloved brand, so our vision is not to redefine, but to revitalize it," SuViche Hospitality founder Aliosha Stern says.
