Beginning next Tuesday evening, June 1, and continuing on succeeding Tuesdays, Sra. Martinez will be cooking up an all-you-can-eat Cuban pig roast. The slow-cooked-in-a-caja China porker is due to be accompanied by heirloom tomato salad, roasted fingerling potatoes, and other side dishes -- all served family style. Wednesday evening, June 16, Texas de Brazil will hold a Louis XIII de Rémy Martin Dinner. The reception and four-course menu starts with Rémy Martin VSOP/ginger cocktails before a first course of salmon tartare paired with frozen Rémy Martin VSOP. Watercress endive salad and churrasco of tenderloin comprise the next two courses, respectively paired with a Chardonnay and Syrah from Bearboat. Dessert is a Brazilian espresso caramel flan with fruits and Rémy Martin XO. The Louis XIII Grande Champagne "cognac experience" serves as the glorious finale.
