Philippe Chow to Re-Open in SoBe, Names Andrew Kaplan as GM

The 6,000-square-foot space will feature an open kitchen complete with hanging Peking ducks, private wine room for 35 guests, and a U shaped bar. But what feature will have diners abuzz (and gives the restaurant something in common with the new Marlins Stadium)?
A retractable roof. That's right. Philippe will be the only restaurant in SoFi with a moon roof.
As in all Philippe restaurants, Philippe Chow will serve as executive chef. Former Prime One Twelve GM Andrew Kaplan has been named general manager.
Most recently, Kaplan has been running a successful food truck and said he was surprised when he received a call from Stratis Morfogan, CEO of Philippe Chow Restaurant Group.
Morfogen is pleased with
the decision to bring Kaplan on board, "I have been an admirer of
Andrew [from the days when he ran Prime One Twelve]
with his ability to truly understand the guest experience in our

Kaplan is looking forward to getting back to
South of Fifth, which he considers his neighborhood. When we spoke with him, he talked extensively about the decor (white
subway tiles, dark wood flooring and a wraparound kitchen where both
patrons and passersby can watch the chefs in action), the menu ("this is
the best Peking duck ever"), and the service ("we're going to have the best people providing a premiere experience").
Philippe by Philippe Chow recently opened a location in Boca Raton and
has outposts in New York, Jericho, Mexico, and Los Angeles.
