After more than six years, Edgar Leal’s Cacao is still one of the most exciting and satisfying restaurants in South Florida, with a roster of inventive, Latin-inspired dishes that show off both the chef’s masterful culinary technique and the quality of his raw materials. You can practically close your eyes and point at the menu and find something good to eat, whether a classically Peruvian corvina ceviche that’s a revelation in its perfect simplicity, sea-sweet fried shrimp tossed with a sneakily incendiary rocoto, elegant corn soufflé with molten Venezuelan cheese, or stellar chicken and chorizo-stuffed quail. Desserts, made with Venezuela’s El Rey chocolate, are the stuff of chocoholics’ dreams.
