The Dutch has snared pastry chef Joshua Gripper to head its baking operations in South Beach.
Gripper's long resume includes Michelin two-star restaurant Oustau de Baumanniere, db Bistro Moderne, Butter, Cafe Boulud, and, most recently, Gotham Steak in Miami Beach.

Gripper will be charged with creating the Dutch's desserts and pies, as well as providing the freshly baked pastries for the restaurant's daytime coffee bar.
