32. Kurobuta Pork Belly at Makoto
The thick slab of pork belly ($13.50) at Makoto is a fatty wonder with a perfectly seared crust. Prized by the Japanese, the long white Tokyo scallion turns crispy in the fryer, while slivers of micro chive add another subtle layer of onion flavor, keeping the sweetness of the glaze in proportion. A spicy hot mustard adds the right amount of umami and the addition of pork cracklings lends an unexpected rind-filled crunch.
