Oudin has trained under Ducasse, Vergé, and Jean-Louis Palladin, who mentored the young Frenchman when he first came to the States in 1982. After a lengthy stint as executive chef of Grand Café in Coconut Grove's Grand Bay Hotel, Oudin premiered his own place in 2000 and has served the most elegant country French fare in Miami ever since.
