Waxy O'Connor's Irish Pub opens for business in Brickell today at 5 p.m. Dubbed Waxy's On The River, the address is 690 NW 1st Court, on the river side of the Neo Vertika building.

Starting tomorrow they will begin their regular operating hours of 11 a.m. to 5 a.m.

Waxy's On The River is the 3rd South Florida outpost for the brand and the fifth in the nation.

Short Order spoke to Excecutive Chef Reginald Collier this morning as he congratulated one of his staff for the baby he had to leave work to greet into the world.

"Her water just broke, so I'm down one man," said Chef Collier.

Here's what else Reginald had to say about free food, Guinness, and pizza...

"We had the friends and family opening last night and we gave away a lot of free food so I'm just getting set up for tonight.

We've got a little bit of everything here, but we're especially proud of our Irish specialties. We've got the Guinness beef stew, we add the beer right in to make that rich Guinness gravy. We've also got our shepherd's pie, baked to golden brown. Of course we have everybody's favorite, Irish style fish and chips. We use fresh cod and it's dipped in our homemade beer batter. We use Guinness for that too.

We have a real Key West type of seafood feel here, that's what we're geared to.

Also, rustic flatbreads, that's one of our main features. I make our pizzas on a home made flatbread dough. We have 6 specialty pizzas: chicken gorgonzola, the banger deluxe, shrimp avocado, veggie deluxe, the Waxy philly steak flatbread, and the margherita.

We got a nice strong team at the front and the bak of the house so I think we good and ready to go."
