The Olsen Sisters in LED Bodysuits? Making Cottage Cheese Crave-worthy

Sometimes we food writers get the craziest, stupidest, and silliest pitches. Just yesterday we saw a subject line that merely read, "Friendship Cottage Cheese," so we called up the poor public relations rep. She wanted us to announce that Friendship brand was updating its packaging (woohoo!) in an effort to "prove cottage cheese doesn't have to be boring." Is that all it takes nowadays? Even if you wrap the Olsen twins in LED bodysuits, I still wouldn't want to witness them being interviewed.

So we threw it back on her and wrote something akin to: "Listen lady, if you want us to write about your snore-worthy cottage cheese, then you better give us something interesting that relates to Miami."


To her credit, in less than a day she responded with a pretty decent recipe and a suggestion that we could visit the company's website for more recipes and tips. She also mentioned that Friendship's 1% Lowfat Cottage Cheese with Pineapple is the biggest seller of Friendship's cottage cheese styles in Florida. Perhaps that's partially due to the fact that Miami is trying to change its label as the fattest city in the United States?

Anyhow, here's the recipe for a Honey Cinnamon Parfait, which we thought was particularly tropical and yummy sounding:

Honey Cinnamon Parfait
Serves 1

1 cup Friendship 1% Lowfat Cottage Cheese (any variety)
3 oz. lowfat cream cheese
1/2 Tbsp. pure vanilla
1-2 Tbsp. honey
1 cup pineapple chunks
1 small banana, ripe yet firm, diced
1 small papaya or mango, diced
1 kiwi, peeled and diced
Pinch of cinnamon
Optional: granola

Directions: Beat cottage cheese, cream cheese, vanilla and honey in small bowl at medium speed until smooth to create filling. Spoon half of the filling ingredients into glasses, add a layer of chopped fresh fruit, another layer of filling, and another layer of fruit. Top with cinnamon and/or granola if desired.
