It is no easy feat to find sensational Indian food in Miami. The profound level of spices and ingredients in Indian dishes are quite difficult to replicate and perfect. Luckily, the Ritz-Carlton Coconut Grove is bringing back its Indian cuisine with a six-week long experience. Executive chef Ramesh Kaduru will be whipping up dishes inspired by the flavors and culture of his hometown of Chennai, India.

Last year, I went for the dinner and it was so unforgettable that I went back for the Diwali celebration as well. I still fantasize about the gulab jamun, a milk solids donut hole, with rose-scented syrup.

Short Order talked with chef Kaduru, who was busy preparing for the Indian celebration (Thursday, October 23).

New Times: Do you enjoy cooking Indian food more than other types of cuisine?

Ramesh Kaduru: To me, cooking is an art and incredibly diverse. Each culture and cuisine provides its own unique flavors and techniques. I certainly do enjoy cooking Indian food since that is my native food however, I especially enjoyed it growing up and my mother making it for me.

How has your upbringing influenced your food?

My mother is truly the inspiration for my culinary background. I grew up and India and moved to the U.S. at 28 years old, and I always remember the strong scents that filled the air when she would cook. I would often just sit in the kitchen to watch her prepare such colorful and delicious dishes. Food is what brought our family together every day to sit and eat as a family.

What are your favorite Indian dishes?

Mixed biryani, chicken tikka masala, and saag panner are my favorite.

We know this Indian Table series won't last forever, so where do you recommend Miami diners sample the best Indian cuisine year round?

Bombay Durbar in Coconut Grove and Aisha in Key Biscayne.

The Indian series launches today at the Ritz-Carlton Coconut Grove and goes until November 15 every Friday and Saturday. The five-course, family-style dinner is limited to only 14 guests per night. The cost is $89 per person, plus tax and gratuity.

Thursday, October 23, Bizcaya at the Ritz will celebrate the ancient Hindu festival of Diwali with a family-style dinner The cost is $69 per adult and $39 per child ages 5 through 12, plus tax and gratuity.

On Sunday, October 26, from 4 to 6 p.m., Chef Kaduru will host an Indian cooking demonstration. The cost is $45 per person, plus tax and gratuity. To make reservations, call 305-644-4680.
