My Ceviche, the Miami-based fast-casual spot positioning itself to become the Chipotle of the raw fish game, will open a new location in Midtown in the former Machiya space.

Workers recently covered the windows to start work and My Ceviche CEO and George's Stone Crab owner Roger Duarte, who runs the business along with chef Sam Gorenstein, confirmed the forthcoming location late Thursday night.
The Midtown location, expected to open mid-2015, is one of three in the works. Restaurants at Miami International Airport and on Miracle Mile in Coral Gables are expected to open early 2015, Duarte said. They will join existing locations in South Beach, Brickell, and South Miami, but when they'll grow beyond South Florida is anyone's guess.
"As soon as we build a robust business model that will allow us to expand to another area we will," Duarte said. "At this point in time we want to make an impact on South Florida."
