At one of my recent organic juice parties (if you're not sure what that is, click here), Jordan Wolfe, my friend and compatriot in all things healthy living, arrived toting the ingredients for his famous raw vegan chocolate "ice cream," which he proceeded to whip up in the Vitamix for the mind-blowing enjoyment of all in attendance.

Among the most surprising aspects of the easy breezy dessert is that it contains only five ingredients, three if you don't count water in its various forms. Also, the fact that all of its sweetness comes from whole dried fruit is pretty awesome. The finished product tastes creamy and indulgent; it's hard to believe that more than half its composition is water and the rest is all raw foods.

As the Healthy Eating and Green Mission Specialist at the South Beach Whole Foods, as well as captain of his own new health coaching biz, Wolfe has shared this recipe with crowds of hungry shoppers and eager students of swell-tasting healthy food prep. Now I'll share it with you.


Ingredients:

1 avocado
1 cup pitted medjool dates
½ cup raw cacao powder
½ cup water
32 oz. ice cubes

Put everything except the ice in a Vitamix or a high powered blender. Blend well, then add ice and blend again to a silky smooth consistency. Delicious and ready-to-serve as-is, or you can top it with your favorite healthy add-ons and enjoy!
