Quick Football Snacks for the Clueless Cook
If you weren't so clueless you would have looked up fun easy recipes and bought the ingredients for Super Bowl Sunday snacks by now.  But since you're reading this, you didn't, did ya?



Quickies: Chickpea Salad with a Fresh Herb Vinaigrette and Last Minute Deviled Eggs with Last Minute Toppings.

Run out and get two large cans of cooked chickpeas. While you're at the marketplace pick up a dozen eggs, mayo, five or six bags of chips, nachos, etc. (depends on how many people you've invited), a jar of green or black olives or both, some fresh herbs such as cilantro and parsley, a couple of lemons, garlic and a few red onions. Chop up the (pitted) olives, two onions, a good handful of cilantro and parsley and a few cloves of garlic. Throw the drained chickpeas in an attractive bowl and whisk mostly everything together with about five tablespoons of olive oil, two tablespoons of vinegar, salt and pepper. Squeeze some lemon juice on top of the salad. Refrigerate your chickpea salad until ready to eat. Serve with nachos and chips.


Next, put twice as many eggs as you have people over, in a big pan of warm water. Let eggs sit for a few moments until they get to room temperature then bring the water to a boil. That way the eggs won't crack. Boil, bring down the heat and let simmer for 11 minutes, (over 11 minutes and you'll get a green ring around the yolks which your freeloading guests might find offensive). Run the boiled eggs under cold water and shell them right away. When cool, cut the eggs in half, carefully cut off the top and bottom of the egg about an 1/8 of an inch, so that they will sit upright without wobbling. Gently remove the yolks and throw in a bowl.

Mix well with equal amounts of mayo, add salt and pepper to taste. With an ice cream scoop or a spoon take the mixture and carefully insert back into egg whites. Neatly if possible, but frankly, your friends probably won't care if you eggs are perfectly presented or not. After all they're eating for free, right?

Remember all of those extra ingredients left over after you made the chickpea salad? Why not sprinkle the remaining chopped olives, onions, bits of garlic and herbs on top of the eggs too? Then plate and surround the edge of the plate with more chips and enjoy. Refrigerate until ready to eat. Oh and since you're providing the snacks, have everyone else bring the beverages.
