93. Corvina at Edge Steak and Bar

Edge may bill itself as a steakhouse, but non-meat-eaters are equally welcome, and equally well-fed, at this newcomer nestled in the Four Seasons Brickell. The menu includes numerous seafood options, including killer tartares and a seafood mixed grill receiving the same treatment (a pass thru the 1800 degree infrared grill) as the 24 oz Bone-in Tomahawk.


A great piece of meat or fish, cooked perfectly and paired with the right sauce, is what a steakhouse is all about, but to gauge the talent of the chefs in the kitchen one must turn to the plated dishes to get the real story. This is where the Corvina ($22) comes in, a healthy dish exploding with perfectly-complementing flavors. The fish receives a basil crust, similar to the one you would find on a rack of lamb, melted over top, and a briny olive-scented greek salad, brought together by a bright piquillo emulsion that completes the tour of the Mediterranean. This is a dish that refuses to be outshone by the steaks that surround it.
