85. Porchetta Sandwich at Salumeria 104
It starts with pork loin wrapped in pork belly, which gets rubbed with garlic, rosemary, sea salt and pepper. Then they roast it for 5 hours, until its so juicy and tender that you want to rub yourself in fatty meat. Next comes the fancy slicer, which cuts the meat so paper thin it becomes translucent when you hold it between your fingers and wiggle it in the sunlight. One of the other Graspa Group properties, Spuntino Bakery, delivers fresh homemade focaccia daily, and thus the porchetta sandwich ($10) at Salumeria 104 is complete. They only serve it in sandwich format during the day, so head over to Midtown and ask to see the lunch menu. It's an extremely edited selection of dishes, but includes a mortadella and brie sandwich that comes in a close second. The quality of the meat in any authentic Italian salumi shop is paramount, and Chef Angelo Masarin is truly committed to bringing a full on taste of Italy to our shores. Grazie mille!
