There's a whole world of chicken salad out there, with mayo, without mayo, with veggies, without veggies. The true chicken salad aficionado knows that this dish is best sweet, salty, tender, creamy, and a little crunchy. The chicken salad at Manhattan Cafe, a family run business that has been serving addictive food for 16 years in downtown Miami, is all of those things, and more.
Owner Rosaly Guimaraes says daily, they bake grade A chicken with bay leaves, mix it with mayonnaise, granny smith apples, white raisins, a paste made from fresh basil they but at the farmers' market, and roasted pine nuts. First inspired by the Waldorf chicken salad, this is altogether another kind of treat that can be eaten on a fresh baguette ($8) or on a bed of romaine with plum tomatoes ($8.25). Either way, your palate will thank you.
