68. Herb-Crusted Salmon at Lulu
Salmon is sometimes a difficult fish to get right. Cook it too little and it's slightly gummy. Cook it too much and it's a dried-out mess. Lulu's herb-crusted salmon ($20 dinner, $14 lunch) is crisp on the outside and moist and tender on the inside. The herb crust is flavorful and aromatic, without being salty or oily. The fish is flaky and tender. Circling the fish is a perimeter of pepper gastrique. A fresh-tasting tomato salad adds a refreshing coolness to each bite. Pair your dish with a glass of any of Lulu's more than two dozen wines, all at an easy-to-swallow $8 a glass.
