22. Warm Madeleines at DB Bistro Moderne
Proust went on and on about them, and first year culinary students
specializing in pastry have to learn how to make them before moving on
to anything more interesting -- in fact, the madeleine seems to have a suprisingly important
place in the history of French patisserie, especially considering it's
not much more than a sponge cake. It's the "warm" that's so crucial, and that's exactly how it's listed on the menu at DB Bistro Moderne ($8), pronounced loudly as the most coveted detail (if you didn't already know, madeleines are best served above room temperature). There's not much going on in terms of flavor for a classic madeleine recipe, which is precisely why you have to get it right, or they fall flat. DB's version are simply perfection, served in a snuggly wrap of napkins to keep them cozy and maintain the warmth within. They're not too dense, nor too light, and are sprinkled with a flurry of powdered sugar that melts into the shell shaped crevices of the exterior. Although there are many wonderful dishes to exit the kitchen at DB, none are so quintessentially French as the madeleines, and none in the city taste better.
