Miami residency comes with a few basic requirements: a tolerance for humidity levels that would make a Californian weep, a distaste for any semblance of driving etiquette, and an obsession with pork. For the Magic City’s many zealots of the other white meat, Cochon 555 is everything. This “nose-to-tail” culinary competition is the truest ode to pig products, and the 305 is one of its many nationwide stops. Five local all-stars will each be given a 200-pound heritage-breed pig with which to concoct six distinct dishes for a discerning audience. Competitors will include Jose Mendin of the Pubbelly Restaurant Group, Conor Hanlon of the Dutch, Bradley Herron of Michael’s Genuine Food & Drink, Dena Marino of MC Kitchen, and host chef Aaron Brooks of Edge Steak & Bar. Expert judges and guests will pick the “Prince or Princess of Porc,” a title that comes with many riches and much fanfare. Best of all, it’s not just a spectator sport. Attendees will be the lucky eaters of 30 dishes made from 1,000 pounds of heritage pig, as well as the imbibers of brews, booze, and wine. It’s pretty much porktopia. VIP access begins at 4 p.m. and general admission begins at 5 this Sunday at the Four Seasons Miami (1435 Brickell Ave., Miami). Tickets cost $200 for VIP and $125 for GA. Visit cochon555.com.
