Even though, it debuted some weeks ago, Chili Pepper's (619 Washington Ave., Miami Beach, 531-9661) newish Thursday night Bite the Pepper is still rocking. Former radio personality Erin, better known as "the DJ with Bite," jumpstarts your weekend by spinning old-school progressive and alternative tunes. The Pepper people have also added a nifty little chill-out area called the Opium Room, with cushy couches, psychedelic videos, and all the ambient mood music you can stand. Ambassador of good will in clubland Ray Rodriguez runs the room on Friday and Saturday night, adding his own sexy touches like candles and smoky incense. The Pepper wants to be your one-stop spot for fun, so they've added another too-cool night called Wise Guy Wednesday, hosted by man-about-town Bobby Radical, with DJ Chili doing chunky funk and slammin' soul rhythms all night. Back on the mainland, Latin rock gets a new home at Alcazaba (50 Alhambra Plaza, Hyatt Regency, Coral Gables, 441-1234). Friday night rocks more than ever with a new rock en espanol thing called Alcazaba Madness. Dancing and drinking rule, with all sorts of drink specials and open bar sessions throughout the evening, as well as a duo of free drinks for the lucky ladies and free paella for everyone. Local Latin rockers D'Facto provide musical inspiration for the dancing crowd. It's back to the beach on Saturday night for Society Hill's (627 Washington Ave., Miami Beach, 534-9993) new rough and tumble affair Exotica. The party people at the Hill go deep and dirty with tribal and house sounds, mixed in with fun retro tunes for that nostalgic crowd. Look for more nuevo nights as promoters and club owners roll up their party sleeves and hit hard for the upcoming season.

Thursday
Swirl, "Rhythm Chamber." Dance to the sounds of the underground with DJs Domination and Corrado spinning the best in electro house and trance dance tunes. 1049 Washington Ave., Miami Beach, 534-2060.

Ready Bar, "Tommy Pooch Thursday." Party promoter extraordinaire Pooch helps you welcome the weekend with the best of old and new music spun by DJ Mark Leventhal. 560 Washington Ave., Miami Beach, 534-8847.

Abyss, "Gothic Masquerade." An evening of dancing, decadence, and debauchery with musical guidance by DJ Dracula's Daughter. 524 Ocean Dr., Miami Beach, 673-6297.

Cafe Miro, "Havana Nights." Cuban duo Carlos and Marta spice up the night with some Latin flavor. 448 Espanola Way, Miami Beach, 538-6476.

Friday
Kitchen Club, "Ladies Night." Progressive, new wave, industrial, and Gothic music playing in two rooms, with free admission for the ladies until midnight. 3701 NE Second Ave., 754-0777.

Bikini Club, "Sex on the Beach." You'll want to dress to impress to get past the velvet ropes as the hits of yesteryear return with DJ Oliver Zogbi. 155 Lincoln Rd., Miami Beach, 674-4410.

Fat Kat's Pool Bar. The pampered pool palace gets together with sister club Iguana for a night of cool cats and hot grooves. 8505 Mills Dr., Town & Country Center, Kendall, 274-8090.

Saturday
Doc Dammers. Bilingual singer/songwriter Pilar and her four piece Mondowow Band delight one and all with their quirky and always entertaining brand of original tunes about love, life, and hamburgers. 180 Aragon Ave., Colonnade Hotel, Coral Gables, 441-2600.

Bermuda Bar. South Florida's biggest dance party is broadcast live on Y-100 with DJ Jade Alexander taking the reins of party culture and giving them a good pull. 3509 NE 163rd St., North Miami Beach, 945-0196.

Bash. DJ Marc Sacheli spins the latest and greatest dance music in the main room, while international DJ Ivano Bellini pumps out world beats under the stars in the back-yard Magic Garden. 655 Washington Ave., Miami Beach, 538-8858.

Sunday
Liquid, "X-Tra Large." Men, men, and more men -- on a night where nothing else much matters. Jack Benggio and Marvella host this men's-travaganza while DJ Jo Jo Odyssey spins humongous grooves. 1439 Washington Ave., Miami Beach, 532-9154.

Cameo Theatre, "Disco Inferno." Year after year the party rolls on and the regulars just can't get enough of Seventies trash music. 1445 Washington Ave., Miami Beach, 532-0922.

Monday
Rose's Bar & Music Lounge, "Open-Mike Night." Locals try their best before a crowd of appreciative regulars. 754 Washington Ave., Miami Beach, 532-0228.

Hard Rock Cafe, "Daily-Double Happy Hour." Loosen those ties and kick off those pumps with food and music, two-for-one drinks every weekday from 4:00 to 7:00, and half-price drinks every weeknight from 10:00 until closing. 401 Biscayne Blvd. (Bayside Marketplace), 377-3110.

Tuesday

Cafe Tu Tu Tango, "Martini Madness." A happy hour of fun for a new generation of martini lovers -- with more than 50 concoctions -- and the smooth jazz sounds of the Bill Pace Trio. 3015 Grand Ave. (CocoWalk), Coconut Grove, 529-2222.
